Ingredients
1 can of sweetened condensed milk
1/4 cup melted butter
1 tsp vanilla extract
1 1/2 cups dried coconut (either fine or medium cut works)
1 1/2 cups graham cracker crumbs (plus more for rolling)
1 1/2 cups chocolate chips
Directions
- Mix Wet Ingredients: In a large bowl, combine the melted butter, sweetened condensed milk, and vanilla extract. Stir the ingredients together until they are well mixed.
- Add the Dry Ingredients: Add the graham cracker crumbs, dried coconut, and chocolate chips to the wet ingredients. Stir everything together until fully combined.
- Chill the Mixture: Refrigerate the mixture for about an hour. Chilling it allows the ingredients to firm up, making it much easier to roll the mixture into balls.
- Form the Cookie Balls: Once the mixture is chilled and form, take small portions and roll them into balls. Each ball should be about 1 1/4 inches in diameter.
- Coat with Graham Cracker Crumbs: After shaping the balls, roll each one in additional graham cracker crumbs.
- Final Chill: Place the finished cookie balls on a baking sheet or large plate lined with parchment paper. Refrigerate them again for about 30 minutes to an hour, or until they are form and fully set. This helps them hold their shape, and ensures they have the prefect texture when served.
